Escape to "The Pearl of the Mediterranean" - A Journey To Alexandria

The second largest city in Egypt, Alexandria, known as "The Pearl of the Mediterranean", has an atmosphere that is more Mediterranean than Middle Eastern; its ambience and cultural heritage distance it from the rest of the country although it is actually only 225 km from Cairo and it is a world apart from the Red Sea.

Founded by Alexander the Great in 331 BC, Alexandria became the capital of Graeco-Roman Egypt, its status as a beacon of culture symbolized by Pharos, the legendary lighthouse that was one of the Seven Wonders of the World. The setting for the stormy relationship between Cleopatra and Mark Antony, Alexandria was also the center of learning in the ancient world. But ancient Alexandria declined, and when Napoleon landed, he found a sparsely populated fishing village.

From the 19th century Alexandria took a new role, as a focus for Egypt's commercial and maritime expansion. This Alexandria has been immortalized by writers such as E-M- Forster and Cavafy. Generations of immigrants from Greece, Italy and the Levant settled here and made the city synonymous with commerce, cosmopolitanism and bohemian culture. Today it boasts the modern Alexandrian Library.

It is a wonderful place to go when you want to get away from it all and don't have the time or money to go abroad. You can easily spend three days in the city and have plenty to see and do. There are shopping malls, huge supermarkets and plenty of shops. There are also many historical attractions that span the ages. It is an easy city to explore by foot and when doing so don't forget to look up and admire the old architecture. In addition, the seafood on offer is second to none.

Alexandria can be reached by plane or bus from Sharm El Sheikh and Hurghada, or by car.
Alexandria is a city to explore at random. It's as important to enjoy the atmosphere as it is to see the sights.

Egypt Poised for Big Rebound in Tourism

Egypt is going to be one of the top destinations in the Middle East this season, according to a senior official. Egypt's tourism and hospitality industry will thrive in room occupancy as sunny weather, high standards of hospitality and the interesting culture are attracting many tourists and business travellers to the country, said Darren Law, General Manager, Conrad Cairo.

Law forecast a return to healthier tourist numbers into and out of the Middle East by the time of the all important summer season. "We've already seen business is coming back with stronger demand and bookings over the last two weeks. We predict a busy summer season from mid-June to mid-September with performance superseding that of any other previous season," commented Law.

The Middle East is the fastest growing tourist destination in the world and is expected to receive 68.5 million tourists by 2020, an annual growth rate of 7.1 per cent, considerably higher than the world average of 4.1 per cent.

There has been no fall-out for the hotel from the SARS issue. On the contrary, it is expected that the unfortunate event will benefit inter-Arab tourism as many tourists will head for Middle East destinations rather than the Far East.

Kitchen Korner

Crunchy Parmesan Chicken
1/3 cup parmesan cheese
1/2 cup flour
1/2 tsp thyme
1 tsp paprika
1/2 tsp salt
pinch of cayenne pepper to taste
1/4 cup melted butter
5-6 boneless, skinless chicken breasts

Preheat oven to 400 F/205 C/Gas 6. Stir together all ingredients, except melted butter. Melt butter in another shallow bowl. Dip chicken pieces in the butter, then press into cheese mixture, pressing gently until chicken is evenly coated. Place chicken in a shallow baking dish. DO NOT crowd chicken or it will become soggy. Bake in the centre of the oven for 10 -15 minutes. Brush with remaining butter during cooking.

Serve with Garlic Mashed Potatoes
1/2 - 3/4 kilo potatoes
1/2 tsp salt
1/3 cup olive oil
2 cups chicken or vegetable broth
2 Tbsp butter
1 garlic clove, minced

Peel potatoes and cut into 1 1/2 inch pieces. Place in pot and add broth. If needed add more cold water to cover the potatoes. Bring to boil, add salt. Cook for 20 minutes or until tender. Drain, reserving 2/3 cups of broth. Return potatoes to pot and mash. Slowly beat in olive oil. Add the reserved broth a little at a time. You may not need all the broth. Stir in the butter and garlic. Season with salt and pepper.
